Small Batch Strawberry Crumble Cake

2 WW Points per serving

Serves 4

Cake Batter:

½ cup of self-rising flour

1 large egg

¼ cup of unsweetened applesauce

1/8 cup of zero calorie sweetener, I use Monkfruit

¼ tsp of vanilla extract

1 cup of fresh, diced strawberries

Crumble: 1/2 tsp ground cinnamon

½ tbsp of lite margarine spread, I use Imperial 27%

1 tbsp of brown sugar replacement, like Monkfruit

1/3 cup old fashioned oats

Preheat oven 350 degrees, grease 6” round cake pan

 

Whisk egg, white sweetener & applesauce, whisk in vanilla, stir in flour, fold in 1/2 cup of

diced strawberries, transfer to pan. Top with remaining strawberries.

Make crumble by mixing margarine and brown sugar then mix in oats and cinnamon. Be sure all oats are coated with butter.

Bake 28-33 minutes. Let come to room temperature then place in fridge. Serve chilled
