Dinner Breakfast Tacos

It made enough for 8 tacos
6 eggs
1 cup of black beans, drained and rinsed
1 can of diced tomatoes & green chilis, drained I used Rotel
2 diced green onions

Whisk eggs, stir in Rotel, black beans and green onions pour into a 12" nonstick skillet. I spray it with I Can’t Believe It’s Not Butter. Scramble until cooked.
Heat tortillas until hot in a heated skillet. I like to wrap the heated tortillas in a hand towel until I’m ready to serve. This keeps them warm without continuing to cook. If you wrap in tinfoil they usually become hard by the time they are ready to eat.
Place egg mixture inside. I like to add a little spicy salsa for no extra points.
