Yields 6 – Normal sized cookies
2 tbsp of lite margarine spread; I use Imperial 27% you can use I Can’t Believe It’s Not Butter for the same points
¼ cup unpacked brown sugar
1/8 cup unsweetened applesauce
½ tsp vanilla extract
1/3 cup of high protein pancake mix, like Kodiak
½ cup whole grain oats
¼ tsp baking soda
Preheat oven to 375 degrees
In a medium add and mix spread with brown sugar. Mix in applesauce and vanilla. Add pancake mix and sprinkle soda over top. Combine, then mix in oats.
Using the small cookie scoop, place 1-2” apart on baking sheet
Bake 8-10 minutes. I did 9 ½ 😊 minutes.
Let cool- That is it!!!
