Healthier Carrot Cake Oat Muffins

2 WW Points Each

Makes 9

1 cup of high protein pancake mix, I use Kodiak

½ cup of whole grain oats, like Quaker

1 tsp baking powder

½ tsp salt

2 tsp ground cinnamon

¼ tsp nutmeg

¼ cup unpacked brown sugar

¼ cup non fat Greek yogurt

½ cup unsweetened applesauce

½ cup unsweetened almond milk

1 tsp vanilla extract

1 cup of finely shredded carrots

Preheat oven 350 degrees grease 9 wells in a cupcake tin.

Mix wet ingredients in a medium bowl including carrots. Mix dry in a larger bowl. Mix wet into dry. Using a ¼ cup scooper for each muffin.

Bake 20-25 minutes. Let cool in pan 5 minutes, remove to wire rack to cool completely.
