Mango Black Bean Corn Salsa

Yields 6-8 cups

 

1 can of corn kernels, drained

1 can of black beans, drained and rinsed

1/3 cup chopped cilantro or parsley

1 medium red onion, finely diced

1 large red bell pepper, diced

1 large mango, diced

2 medium tomatoes

Juice from 1/2 of lime

Add all to a large bowl, squeeze lime juice and mix.

Use on tacos, in salads, in wraps etc..

 

Refrigerate until ready to use.
