Firecracker Chicken

Delicious, flavorful dish that won’t use any points

Serves 3 big portions

1lb ground chicken breast

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1 tsp olive oil

1 small onion, finely diced

Sauce: 3 tbsp soy sauce

1/2 tbsp of keto honey, I used Wholesum Yum, you can also use Choczero 

1 tbsp rice vinegar or mirin, I use mirin

1/4 tsp ground ginger

1/2 tsp minced garlic

1/2 cup of buffalo sauce, I use Frank's Red Hot, Buffalo Wings Sauce

First make the sauce and set aside

Heat 12" skillet with oil on medium-high heat. Add onion, cook for a minute or two, sprinkle on spices, mix, then add chicken. Cook through, stir in sauce, bring to a boil, and continue to boil 8-10 minutes, reduce heat to low and simmer 5 minutes. Serve over cauliflower rice. Garnish with diced green onion.
