Peanut Butter Chip Cookies with Pecans
2WW Point each
Makes 4 good size cookies
1 tbsp (14g)of lite margarine spread, I use Imperial 27%
2 tbsp (28g) of nonfat plain Greek yogurt, I use Fage
3 tbsp of a zero-calorie sweetener, I used monkfruit white sugar
1/4 cup(30g) of all-purpose flour
1/4 tsp baking soda
1/8 tsp salt
7 grams of finely chopped pecans
18 grams of sugar free peanut butter chips, I used Lily’s
Preheat oven 350 degrees, small baking sheet
In a medium bowl; mix butter, yogurt, and sweetener, add 1/2 the flour, soda and salt, mix well. Mix in remaining flour. Mix in nuts and chips
Use a tablespoon cookie scoop and place 2” apart on sheet, divide any remaining batter between them and bake 11 minutes. Let cool completely on baking sheet
