Small Batch Snickerdoodle Cake

Serves 4

½ cup of all-purpose flour

½ tsp baking powder

¼ tsp salt

¼ tsp of cream of tartar

1 ¼ tsp ground cinnamon

1 tbsp lite margarine spread, like Imperial 27% or I Can’t Believe It’s Not Butter

1 Tbsp zero calorie brown sweetener, I use Truvia

5 tsp zero calorie white sweetener

1 large egg

¼ cup of unsweetened applesauce

Preheat oven to 350 degrees, grease a 6” round cake pan or comparable

In a medium bowl, mix butter with brown sweetener and 3 tsp of white sweetener. Whisk in egg and vanilla.  Sprinkle flour over top. In a small dish, mix: cream of tartar, salt, powder ¾ tsp of cinnamon. Add to flour, mix, whisk in applesauce, continue to whisk until smooth. Transfer to baking pan. In the small dish mix 2 tsps of white sweetener with ½ tsp of cinnamon, sprinkle over top of batter.

Bake 18-20 minutes. Wait a few minutes and remove from pan to cool. Slice and serve!
