Blueberry Protein Bagels

3 WW Points each with 9 grams of protein 

Makes 4  

¾ cup (90 g)of all purpose flour

½ cup (53 g) of high protein pancake mix, I use Kodiak

1 1/2 tsp baking powder

¼ tsp of salt

1 egg – yolk separated from white

1 tbsp of 0 cal sweetener, I use Truvia

5 tbsp of fat free Greek yogurt, I use Fage

¼ cup of blueberries

Preheat oven 410 degrees

To a medium bowl add , flour, pancake mix, powder, sweetener, and salt, mix. Add egg yolk and yogurt. Mix into a dough, set on a flat surface, knead in blueberries.  Separate into 4 equal portions. Roll into a 8-10” log, connect edge and seal seam.  Place on baking sheet, brush with whisked egg white.

Bake 15 minutes. Let cool before slicing.
