Apple Pie Pastry

3 WW Points per serving 

Perfect for Mother's Day, not super sweet so add some whipped topping if you'd like

Serves 6

6 phyllo sheets, room temperature is a must

2 eggs

2 tbsp of zero calorie sweetener

1/2 cup low fat cottage cheese

2 small-ish apples, sliced thin then cut in half

1 1/2 tsp cinnamon

11x7 casserole dish, spray with PAM , preheat oven 350 degrees

Fold each sheet separately, accordion, place in dish. The sheets are longer than the pan, that's okay, lay in dish however it fits. Repeat with remaining 5 sheets, placing one next to the other, covering the bottom of the dish. Tuck apple slices in between folds everywhere.

Blend eggs, cinnamon, and cottage cheese until smooth and no curds remain. Spray apples and phyllo with I Cant Believe It's Not Butter, no more than 10x's. Then gently pour blended cheese over apples and phyllo

Baked 40 minutes, let rest 10-15 minutes before slicing.
