Cake Mix Crumble Berry Cream Bars

3 WW Points per serving

Serves 8

Blueberries or berries of choice

Cream: Whisk 1 large egg with ¼ cup of fat free Greek yogurt 1 tbsp of lemon juice and 2 tsp of zero calorie sweetener. Set aside

Base and crumble:

222 grams of zero sugar yellow cake mix, I use Pillsbury

1 tbsp zero calorie brown sweetener

½ tsp ground cinnamon

4 tbsp lite margarine spread, I use Imperial 27% vegetable oil

 

Preheat oven to 350 degrees, grease a 9”x7” casserole dish.

 

Prepare crumble by mixing ingredients, use a fork and mash butter into cake/cinnamon/sugar mixture until you have a wet but somewhat crumbly dough.  Reserve ½ cup and press remaining into bottom of prepared dish.  Slowly pour cream over top, add berries in a single layer. Use reserved crumble mixture, dropping pieces over top.

 

Bake 30 minutes or until center is set with a light brown crumble.  Let cool completely in dish, transfer to fridge until set and cold throughout.
