Meal Prep Sheet Pan Egg Bake
1 WW Point An easy dish with black beans and sausage for added protein.




Serves 8
8 large eggs
4 mini bell peppers, diced
½ cup of black beans, drained and rinsed
Salt & pepper to taste
¼ tsp onion powder
¼ tsp garlic powder
¼ cup of water
6 diced chicken maple sausages, heated. I use Applegate Chicken Maple
Preheat oven 300 degrees, grease 15x10 baking sheet
Whisk all ingredients together in a medium bowl and pour into prepared sheet.
Bake 8 minutes, spin sheet, continue to cook an additional 6-7 minutes or until center is firmly set.
I toasted a slice of bread, placed the egg bake serving on top. You can add cheese if you like, sliced avocado, etc.. I used tobasco and sriracha. Served it with a ½ cup of 2% cottage cheese for a high protein breakfast.
Place in freezer if not eaten 3 days
