Chocolate Chip Banana Oat Cookies
They are delicious!!! and only 2 WW points for 1
I was going to name these breakfast cookies, hubby says "Why, it's a GOOD cookie," guess he thinks breakfast cookies aren't normally good 😄
Makes 8 - big thick cookies
3/4 cup of high protein pancake mix, I use Kodiak Buttermilk
1 cup of whole grain oats
40 grams of sugar free chocolate chips, I use Lily's
6oz. (3/4 cup) mashed overripe banana
1/8 tsp salt
1/4 tsp baking soda
1 large egg
1/4 cup of zero calorie brown sweetener, I use Monkfruit
Preheat oven 350 degree
Mash banana in a medium bowl, whisk in egg, add pancake mix, soda, and salt (sprinkle both over top of banana mixture) whisk, add oats, then stir in sugar and finally chocolate chips.
Using 2" scooper, place on baking sheet about 2" apart
Bake 10 minutes, remove from oven, and let cool.
