Protein Peanut Butter Cookies

7 grams of protein each
45 grams of peanut butter powder, I use NAKED PB
45 grams of vanilla cream 100 calorie protein powder, like Muscle Milk 100
¼ tsp of baking soda
2 tsp of zero calorie sweetener, I like Lakanto Monkfruit or Truvia
3 tbsp of sugar free maple syrup, I like Maple Grove Farms
2 tbsp of water
Preheat oven 350 degrees
In a medium bowl weigh out your powders, add soda and sweetener, stir. Add syrup and mix and mash it into powders. Add water, this may vary depending on the pb and protein powders you use. You want a moist but firm batter. Mix and mash the water into the powders until it's all absorbed. Using the small cookie scoop (1 tbsp) place on a baking sheet. Do the sugar criss cross by pressing the back side of a fork into sweetener, then press it on the cookie, add more sweetener, turn 90 degrees, press again
Bake 6 minutes. Let cool completely on sheet.
Since this is flour and egg free you can eat it unbaked too. Use as a spread on apples or celery sticks.
