One Pan Chicken-n-Dumplings Recipe

5 WW Points per serving with 5 dumplings each 

Serves 5 

Get cooking with my One Pan Chicken-n-Dumplings recipe and enjoy a hearty meal in no time!

Ingredients:

  • Use your 2-ingredient dough for dumplings cut into 25 1-2” pieces. See end of recipe for my recipe. 

    1lb chicken tenders

    1 10.5 oz. of condensed soup cream of chicken, use 98% FF for lower points

    1 cup of low sodium chicken broth

    ½ cup of corn (optional) or use frozen carrots

    ½ cup of frozen peas

    2 stalks of celery, finely chopped

    ¼ cup of finely diced yellow onion.

    Garlic Salt & Pepper, season both side of chicken, a few shakes of each

    1 tsp olive oil

Instructions:

Preheat oven to 375 degrees, heat an oven safe 12” nonstick skillet on med-high, season chicken, add tsp of olive oil to pan.  Brown chicken both sides. Remove to plate & shred. Add onion, celery, corn, to skillet, cook until onions are translucent. Mix broth with soup and pour into skillet, mix in chicken and peas. Place prepared dumplings over top. Cover with lid and bake 25 minutes. Remove from oven and serve. Salt & Pepper to taste.

My 2-ingredient dumpling dough –

120 grams of flour,

155 grams of yogurt,

1 tsp baking powder,

¼ tsp salt.

1 tsp of dried rosemary.

Mix into, knead into a dough cut into 25 1-2” pieces.
