Healthy Low Point Blueberry Oat Bread

1 ¾ cups whole grain old-fashioned oats
1 tsp baking powder
¼ tsp salt
1 tsp cinnamon
2 eggs
½ cup non fat plain Greek yogurt
¼ cup sugar free maple syrup
1 tsp vanilla
1 cup mashed spotty banana (2 -9” bananas)
1 cup of fresh blueberries
Preheat oven to 350 degrees, grease 9x5 loaf pan
Blend oats, powder, salt, cinnamon into a flour consistency in a blender.
In a medium bowl whisk together mashed banana and egg, add yogurt, syrup, and vanilla, whisk until well combined, stir in blended oat mixture. Transfer to loaf pan, sprinkle ½ blueberries, push them down with spoon or thin spatula, top with remaining blueberries.
Bake 50-55 minutes, let cool 3 minutes, remove from pan to rack.
