Small Batch Whole Wheat Cranberry Scones

Makes 4
1 cup (120 grams) of whole wheat flour
1 ½ tsp baking powder
¼ tsp salt
1tsp cinnamon
17 grams chopped dried cranberries
1 tbsp sweetener, I used Truvia
3/8 cup 1.5% fat cottage cheese
3 tbsp unsweetened applesauce
1 tsp vanilla extract
Preheat oven 410 degrees, small baking sheet with lined with parchment paper.
Add dry ingredients except cranberries to a medium bowl, mix. Whisk together in a separate bowl: wet ingredients. Pour wet into dry, quick mix, add cranberries. Continue to mix until dough forms.
Turn out onto flat surface, knead in any loose dry ingredients then shape into a 6” disk about ¾” thick. Cut into 4 equal triangles.
Bake 16 minutes, remove baking sheet, and let cool. You can top with sugar free preserve or lite spray butter.
