Air Fryer Chocolate Lava Cake for One

3 WW Points 

Serves 1

1 tbsp of all purpose, flour

1 Tbsp unsweetened cocoa powder

1 egg (beaten)

1/4 tsp baking powder

1/4 tsp vanilla extract

1 tbsp lite butter spread, like Imperial 27% vegetable oil

1 tbsp sweetener, I used Lakanto monkfruit

21 sugar-free semi-sweet chocolate chips, I use Lily’s

In a small microwave safe bowl melt butter with chocolate chips in the microwave for six seconds stir until chips are melted.  Mix in baking powder and vanilla add egg, mix.  Add flour and cocoa & sweetener stir until completely combined.

Pour into a well-greased 8 oz ramekin. 

Air fry 350 10-12 minutes.  Let cool a few minutes, turn out onto serving plate.

Air fryers are all different so you might have to play with time.  First time I did this it was 8 minutes, too much lava, this time I did it for 12 just enough lava for me.

Air Fryer Bloomin' Onion

3 WW Points per serving

Now that's a Snack without the guilt!!!!

Air fryer or oven, either will work.

1 medium yellow onion

1 oz. of Chicken Coating Seasoning Mix, like Shake n Bake

1-2 Large Eggs

Cooking Spray

Preheat air fryer to 425 degrees.

Slice top off onion, peel, leaving root base intact. Place cut side down on a flat surface. Make 1/2" slices from root base to bottom cutting into the middle, all the way around the onion. Flip over and separate as best as possible. Add egg to a deep bowl and whisk, transfer onion to bowl, turning over a few times to coat evenly. Place onion on a piece of parchment and sprinkle chicken coating evenly, inside and outside, getting in between onion slices best as possible. Spray with cooking spray 4-5 times.

Air Fry 20 minutes, my Air Fryer is the toaster oven style, so a basket fryer may take less time.

Serve with your favorite dressing or dipping sauce, I used Skinny Girl Chipotle Ranch.

Air Fryer Cinnamon Roll for One

3 WW Points 

Makes 1

¼ cup Self Rising Flour

3 Tbsp of Fat Free Greek Yogurt

1/8 tsp of baking powder

1 tsp of sugar replacement, I use Lakanto Monkfruit

19 sprays of I Can’t Believe It’s Not Butter Spray

1 tsp ground cinnamon

3 tsp brown sugar replacement, like Lakanto Monkfruit

Mix flour, powder, sweetener & yogurt in a  small bowl until dough forms, remove from bowl and knead by hand, fold in half, press repeat about 10 times.  Dust surface with flour and roll to about 1 1/2”-1 3/4” wide by 9-10” long. 

Spray with butter spray, coat with brown sugar, sprinkle with cinnamon.  Roll short end to short end.

Air fry at 395 degrees, 15-18 minutes.  Add extra time for preheat or preheat just prior to using

Mix 2 tbsp of powdered sweetener with about ¾ tsp of water. Frost top and dig in!!!

Air Fryer Oatmeal Chocolate Chip Cookie

4 WW Points 

Makes 1 Deep Dish Cookie

28 grams Maple & Brown Sugar instant oatmeal, I used Better Oats 100 Calorie packet

1 tsp water

½ tbsp lite margarine spread, I used Imperial 50%

1 tsp vanilla extract

2 tsp of FF Plain Greek Yogurt

21 Semi Sweet Sugar Free Chocolate Chips, I use Lily’s

2tsp of brown sugar replacement, I use Lakanto Monkfruit Brown Sugar

Preheat air fryer 320 degrees.

Cream together butter & sweetener, add oats, press and mix with spoon, you want to incorporate the butter into the oatmeal as much as possible. Add yogurt, water, vanilla, mix until well combined, fold in chips, transfer to a greased 4oz ramekin or comparable dish.

Air Fry 15 minutes, let cool a few minutes, transfer to plate, enjoy!!!!

To use plain instant oatmeal: Add 1 tsp of Sugar Free Maple Syrup

If you don’t like chocolate chips in your oatmeal cookies, omit and save a point!

Air Fryer Zucchini Corn Fritters

2 WW Points (4 fritters)

Makes 4

3 Tbsp of Corn meal, I use Quaker Oats, I found it to be the lowest points. Bought at Walmart

1 large beaten egg

1 shredded zucchini, the zucchini weighed 5.4 oz.

1 tsp each of garlic powder, onion powder, paprika, pinch of salt & pepper.

Preheat air fryer 375 degrees

Shred zucchini, I did half in the large holes and half small holes. Wring out moisture, cheesecloth works great or a clean kitchen towel/ paper towel.

Add corn meal to a medium bowl, mix in seasonings. In another bowl combine zucchini and egg, transfer to corn meal bowl and mix. Separate into 4 balls, smash flat and place in air fryer basket.

Spray with Olive Oil cooking spray and air fry for 12 minutes.

They should have a nice brown crust around the edges and be firm when picked up.

Air Fryer Cinnamon/Sugar Biscuit

3 WW Points 

Tastes like a doughnut

1 Flakey layer biscuit peeled apart (in half) I use Pillsbury Grands

1/2 tsp of Cinnamon Sugar

3-5 Sprays ICBINB (I Can't Believe It's Not Butter)

Air fry 375 degrees 10-13 minutes

Spray with ICBIN, dust with cinnamon/sugar after it's cooked

I found this Fresh Finds Cinnamon Roll Flavored Sugar at Big Lots (1/2 tsp 0pts).

You can also just sprinkle with monk fruit and cinnamon if you wish.

 

I freeze 5 biscuits individually wrapped placed in a large freezer bag, defrost overnight in the fridge before baking.  The others I keep in the fridge for up to two days.

Air Fryer Apple Cinnamon Oat Muffins

1 WW Point per serving

Makes 4

1 packet of Lower Sugar Apple & Cinnamon Instant Oatmeal,

I use Quaker

¼ cup High Protein pancake mix, I use Kodiak Buttermilk

½ cup unsweetened applesauce

1 large egg

¼ tsp baking powder.

In a medium bowl, whisk egg and applesauce, add pancake mix baking powder and oatmeal packet. Stir with spoon to combine.   Line a 4oz. glass/ceramic ramekin with a tinfoil cupcake liner or line your ramekin with tinfoil (I don’t recommend using paper cupcake liners, not only does it stick, it doesn’t cook throughout) grease with cooking spray, add ¼ cup of batter.

 

Air Fry 360 degrees(1000w) for 22 minutes (preheated), once timer goes off, leave to sit inside the air fryer for 5 minutes.   

 

Oven Bake – No liners, grease pan – bake 350 23 minutes, let cool 5 minutes in pan.
