Blueberry Protein Cinnamon Waffles

Let's try low fat cottage cheese in waffles, well, glad to say that they are DELICIOUS!!! Family was so surprised to find out that there was cottage cheese in them.

Makes 9

1 cup (106 grams) of a high protein waffle mix, I use Kodiak

½ cup 1.5% low fat cottage cheese

2 eggs

½ cup unsweetened almond milk

1 tsp baking powder

1 cup blueberries

2 tbsp of zero calorie sweetener, I used Truvia 

1 tsp vanilla extract

2 tsp ground cinnamon

In a medium bowl, beat egg whites with cottage cheese and sweetener until fluffy 2-3 minutes. Beat in egg yolks. Beat in pancake mix and powder. Finally beat in milk, cinnamon and vanilla. Fold in blueberries.

Use a heaping ¼ cup of batter for each waffle.

Top with light whip cream and sugar free syrup!!!
