Jam Protein Cakes

 Jam Protein Cakes, a perfect treat for those looking to satisfy their sweet cravings without compromising their health goals. 

2 WW Points per serving 

Makes 8 – 7 g of protein each

1 ¼ cup (132g) of a high protein pancake mix, I use Kodiak Buttermilk Waffle & Pancake Mix

¾ tsp baking powder

Pinch of salt

1 egg

½ cup 2% cottage cheese

¼ cup of zero calorie sweetener, I use Lakanto Monkfruit Original

3/8 cup of unsweetened almond milk, I use Kirkland Almond Beverage

8 tsp sugar free preserves, like Great Value Sugar Free Blackberry

Preheat oven to 350 degrees, greases 8 wells in a muffin or brownie pan.

Blend egg, sweetener, cottage cheese until smooth. In a separate bowl, combine pancake mix, salt & powder.  Mix the blended cottage cheese into the bowl with the pancake mixture. Stir in the almond milk.

Divide equally between the 8 greased wells.  Add 1 tsp of preserves to each, swirl it in.

Bake 25-30 minutes, until golden brown.

You can change this up with different flavors of jam. I also use Skinnygirl preserves
