Baked Nacho Tacos

Makes 12 Nacho Tacos

 

12 Taco Shells, I used Trader Joe's Gluten Free 2pts each

1 lb. of 98% Fat Free Ground Chicken

1 16oz. can of Fat Free Refried Beans, Rosarita

15 grams of Taco Seasonings from Trader Joe's

6 slices of Velveeta (1/2 slice for each taco)

Toppings:

Green Onions

Diced Tomato

Jalapenos

a dollop of Lite Sour Cream

In a large skillet, cook chicken, add beans and seasoning, mix well and cook until heated through.

Place shells in the slots of an upside cupcake tin add a 1/2 slice of cheese to the bottom of each shell. Fill with chicken/bean filling.

Heat in 375-degree oven for 15 minutes.

Add toppings and eat!!!
