Makes 4
Dough:
1 cup+1tbsp divided (127 g) of all purpose flour
1 ½ tsp baking powder
¼ tsp salt
¼ cup of pumpkin puree'
1 large egg
1 tbsp of sweetener, Truvia or Monkfruit
1 tsp vanilla extract
1/2 tsp of ground cinnamon
Filling: 1 tsp pumpkin spice ,1 ½ tsp of brown sweetener , like Truvia or Monkfuit
I Can’t Believe It’s Not Butter Spray.
Frosting: 3 tbsp powdered sweetener, I use Lakanto Monkfruit mixed with 1 tbsp of ff greek yogurt, you want a paste not a drizzle so add more sweetener if need be.
Preheat oven 350 degrees
Add your dough ingredients (save 1 tbsp of flour) to a medium bowl and mix with a large spoon until you have a ball of dough. Sprinkle remaining 1 tbsp of flour over the dough, top and bottom Transfer to flat surface. Gently roll to 6”x8” rectangle, the dough will get somewhat sticky.
Generously spritz with butter spray, combine cinnamon and brown sugar, then sprinkle over rolled dough, leaving short edges clean. Roll short side to short side, you may need to scrape the dough from the surface as you roll. Pinch seam to seal and cut into 4 equal portions place in a small round greased baking pan/dish.
Bake 18-20 minutes. Slather with frosting.
