Strawberry Breakfast Cake

3 WW Points per serving 

Serves 8 - grams of protein per serving

2 cups (212 g) of high protein pancake mix, I use Kodiak Buttermilk

2 tsp of baking powder

1/4 tsp salt

1/2 cup zero calorie sweetener, I used Monkfruit

4 tbsp lite margarine spread, I use Imperial 27% but you can also use I Can't Believe It's Not Butter 30%

1/3 cup non fat, plain Greek yogurt, I use Fage

1/2 cup unsweetened plain almond milk

1 tsp vanilla extract

1 cup diced fresh strawberries

Preheat oven 375 degrees, grease 9" glass pie dish

Mix dry ingredients in a large bowl, add butter, and "cut in"-press butter into dry ingredients until you have a somewhat clumpy sand texture.

Combine milk, yogurt and vanilla, add to dry and mix with a large spoon. Fold in strawberries. Transfer to prepared dish.

Bake 30-35 minutes. Let cool in dish 10 minutes.

Slice and serve, enjoy a warm piece of "cake"
