Protein Mini Cinnamon Pancake Loaf

Serves 4 – 10 grams of protein per serving!

3 WW Points each

1 cup (106 grams) of high protein pancake mix like Kodiak

1 large egg

1/2 cup of fat free Greek yogurt

1 tsp of baking powder

2 tbsp of zero calorie sweetener , I use Lakanto Monkfruit

Topping:

1 tbsp of zero calorie brown sweetener, Lakanto Monkfruit

1 tsp of ground cinnamon

1 tbsp of lite margarine spread, I use Imperial 27%

1 tsp of sugar free syrup, I like Maple Grove Farms

 

Preheat oven to 350 degrees, grease a mini loaf pan 6”x3”

In a small bowl mix syrup and butter together add cinnamon & brown sugar, mix.

In a medium bowl add pancake mix, egg, powder, yogurt and sweetener. Mix into a thick batter, transfer to prepared pan. Smooth  and spread topping.

Bake 25-30 minutes, toothpick check at 25. Let cool a few minutes, remove from pan.
