Half Batch Lemon Cream Strawberry Drop Biscuits
Makes 6
2 WW Points each
1 cup of all purpose flour (120g)
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup of fat free, plain Greek yogurt, I used Fage
1 Tbsp of sweetener, I use Monkfruit, I always use Lakanto
70 g of fresh, diced strawberries, fairly small (about a 1/2 cup)
1 laughing cow lite cheese wedge
1/2 tbsp lemon zest
1 tbsp of lemon juice
Preheat your oven to 410°
Add the diced strawberries to a small bowl. Sprinkle with the sweetener.
In a medium bowl, mix cheese with lemon zest and juice until creamy. Add flour, salt, baking powder, then add yogurt and strawberries. Mix with a large spoon, I used a wooden spoon, keep mixing, pressing the strawberries smashing them into the flour. Continue doing this until all the flour & yogurt is incorporated and you're left with a moist dough.
Divide into 6 equal portions, I used my 2” scoop and filled it about 1/2 way
Place on parchment lined baking sheet and bake 12 minutes. Let cool on sheet 10 minutes.
