High Protein Butter Crunch Breakfast Bread
11 grams of protein per slice
2 WW Points each

8 Slices
1 ½ cups (159 grams) of a high protein pancake mix, I use Kodiak
1 tsp baking powder
25 grams peanut butter powder, I use NAKED PB
¼ cup each of brown and white, zero calorie sweetener, like Lakanto Monkfruit or Truiva
2 tsp ground cinnamon
2 eggs
¾ cup unsweetened applesauce
¼ cup of unsweetened almond milk
For the the crunch:
Mix & mash with a fork in a small bowl to a wet sand texture. Use your fingers to break up larger pieces. Set aside.
2 tbsp + 1 tsp of pancake mix
1 ½ tbsp of a lite margarine spread, I use Imperial 27%
3 tsp each of brown and white zero calorie sweetener
25 grams of peanut butter powder
Preheat oven 350 degrees, grease and line with parchment a 9x5 loaf pan
Add dry ingredients to a medium bowl add wet ingredients, mix with hand mixture until smooth. Pour into prepared pan. Sprinkle crunch mixture over top.
Bake 40-45 minutes. Let cool 10 minutes, using parchment as handles, remove from pan. Store in airtight container on counter or fridge.
Smear with a teaspoon of your favorite sugar free preserves for no additional points.
Breakfast or dessert!
