Fool Me Fried Rice!

3 Cups of Frozen Cauliflower Rice

3/4 cup of frozen peas & carrots

3/4 tsp of sesame oil

2 eggs (whisked, fried and chopped up)

2 Green onion (green part only, chopped)

In a microwave safe bowl, add cauliflower and peas/carrots, green onion, cook 5 minutes, while that's nuking, fry your eggs, chop up set aside.

Add egg to your cooked cauliflower, drizzle with sesame oil, toss and serve. Tasted fantastic even without the soy or oyster sauce.
