Blueberry Banana Waffle

1WW Point per serving 

Serves 6

½ cup of oats, I use Quaker Old Fashioned Whole

1/2 cup of high protein pancake mix, Kodiak Buttermilk is my favorite  

1 egg

¼ cup of unsweetened almond milk

1 -4oz. (medium) ripe banana

2/3 cup of blueberries

1 tsp of baking powder

Heat 4” waffle maker

Add all ingredients except blueberries and pancake mix to a blender, I use the blender cup. Pour into a medium bowl, stir in pancake mix and blueberries.  Using a ¼ cup of batter, add to a greased waffle iron, press down on the lid until it closes. Cook about 3 minutes. Repeat with remaining batter.  

 

Cold storage. Reheat when ready to eat, top with favorite syrup or jam.
