Meal Prep Zucchini Bread Waffles

You can turn your favorite quick bread into a favorite waffle you can have for breakfast.
To Freeze: Separate with parchment paper, store in large freezer bag. Pop in the toaster to reheat
1 ½ cups (159 grams) of high protein pancake mix; like Kodiak Buttermilk Pancake & Waffle mix
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
½ Tbsp ground cinnamon
1/4 tsp nutmeg
1 ½ cup shredded zucchini
2 eggs
1 tsp vanilla extract
½ cup unsweetened applesauce
¼ cup zero calorie brown sugar
2 tbsp zero calorie sugar
Combine in medium bowl: pancake mix, soda, powder, salt, cinnamon. In a separate bowl whisk; eggs, mix in shredded zucchini, sugars, vanilla and applesauce. Add wet to dry and mix.
3 tbsp of batter for each waffle. I used my Dash 4” waffle maker.
