Small Batch Blended Oat Cinnamon Oat Muffins

Pair with a protein drink for a grab go breakfast

Makes 4

1 cup of oats, not instant

1/2 tsp baking powder

1/4 tsp salt

1 tsp cinnamon

1 egg

1/4 cup of unsweetened almond milk

1/2 tsp vanilla extract

2 tbsp white sugar substitute

Preheat oven 350 degrees

Add to blender or blender cup: oats, powder, salt & cinnamon, blend to flour consistently, it’s okay if there’s a few pieces of oats

In a medium bowl whisk egg and sweetener, add milk and vanilla, whisk to combine, stir in oat flour mixture

Grease 4 cavities in a muffin tin divide evenly about a 1/4 cup of batter each

Bake  12- 15 minutes.
