Taco Tator Tot Casserole

6 WW Points per serving 

Serves 6

1lbs of 99% Fat Free Turkey or ground meat of your choice (chicken, beef)

1 10 oz. can of Condensed Cream of Chicken, Campbells Healthy Request is what I used

1 10.5 can of drained Corn Kernels

5 tsps. of Taco Seasoning, I use Kinders

1 medium onion diced

5 small jalapenos, sliced in rings (optional)

8 oz. of Fat free evaporated milk

45 Tator tots, I used a Safeway Brand, Signature Select Alexia Potato Puffs, Crispy Seasoned with Garlic & Black Pepper. 

3 oz. of Cheese, I use a kitchen scale, you get more for the points. I used Kraft 2% Milk fat Shredded Mexican Blend 

Preheat oven 350 degrees, grease 9x13 casserole dish

Brown turkey with diced onion, drain add back to pan, add corn and sliced jalapeno (if using) and sprinkle with 2 tsp of Taco seasoning, mix.

Mix cream of chicken with milk and stir in 1 tbsp of taco seasoning.

Add your turkey mixture to the bottom of the casserole dish, top with 45 tots, spaced evenly. Using a spoon, drizzle each tot with soup mixture, then pour remaining over the rest of mixture/tots.

Sprinkle with cheese (if using Fat Free Cheese wait until 20 minutes into cook time before adding). I sprinkled a little more seasoning over top.

Bake uncovered 40 minutes. Let rest for 15 minutes to thicken. Slice and serve.

 

If using a Fat Free Cheese, add 20 minutes into cook time, then bake for another 20 minutes.
