Chicken Enchilada Suizas

Filling 1 WW Point at 10 servings, points will vary depending on tortilla used

Suizas – enchiladas with green sauce, guacamole and sour cream.

Serve 8-13 depending on size of tortilla

2 chicken breasts – about 22oz.

1 15oz. can of green chili enchilada sauce, I used Hatch

8-10 corn tortillas, use your favorite medium sized tortilla

¼ cup of diced white onion

60 grams of lite Mexican shredded cheese. I used Trader Joe’s

1 tbsp Taco seasoning

¼ tsp each of salt, pepper, garlic powder

Thin each breast in half, then cut into tenders. Season both sides.  Heat 12” skillet and drizzle with 1 tsp of olive oil.  Add chicken to hot skillet and cook until internal temp is 165 degrees. Let rest 5 minutes and dice.  Add to a medium bowl with onions a 1/3 cup of the sauce and the cheese. Mix.

Heat the tortillas until warm and pliable.  Grease a 9x13 casserole dish, add 1/3 cup of sauce, tilt dish to spread sauce over the bottom.  Add 2-3 tbsp of chicken mixture to each tortilla and roll. Place seam side down in dish. Repeat until all mixture has been used. Pour remaining sauce over top. Add more cheese if you’d like.  Bake at 350 degrees for 25-30 minutes. Top with light sour cream and guacamole
