Small Batch Chocolate Banana Oat Bread

2 WW points per serving

Serves 6 (3 per loaf) makes 2 mini loafs

1 really ripe medium banana (weighed 3.7oz.)

2 tbsp of zero calorie brown sugar, like Lakanto Monkfruit

2 tbsp of zero calorie white sugar, Lakanto Monkfruit

1 egg

1 tsp vanilla extract

1/2 cup of old fashioned oats, I use Quaker

1/2 cup of high protein pancake mix, like Kodiak

1/4 cup of unsweetened cocoa

1/2 tsp baking soda

pinch of salt

35 grams of sugar free milk chocolate chips,I'm using Choczero

Preheat oven to 350 degrees, grease 2 mini loaf pans (6x3)

In a medium bowl, mash banana, mix in sweeteners, add egg and vanilla and whisk to combine. Sprinkle in cocoa and baking soda, whisk together. Add pancake mix and stir to combine. Mix in oats, fold in 1/2 the chocolate chips. Transfer 1/2 the batter to each pan. Sprinkle on remaining chips.

Bake 20-22 minutes, let cool in pan about 10 minutes. Refrigerate leftovers.
