Slow Cooker Creamy Cheese Red Potato Soup

4 WW Points per 1 cup serving 

Super easy – minimal ingredients

Serves 5 – 1 cup portions (It actually makes 5 ½ cups)

 

You’ll need a 6-8 quart slow cooker

 

1oz. (1 package) of onion soup mix, I use Lipton

1 ½ lbs of potatoes, I used red potatoes, cut into ½” cubes

5 cups of low sodium chicken broth

1 cup of shredded carrots. You can also add a cup of diced celery

½ cup low fat 1.5% cottage cheese

2 oz. of a light shredded 3 cheese blend; like Trader Joe’s

Diced green onions

 

Add potatoes, soup mix, 4 ½ cups of chicken broth to slow cooker. Cover, low setting – 6 hrs. at the 6th hr. blend cottage cheese with a ½ cup of chicken broth and add to cooker, stir in shredded cheese cover. Cook additional 45 minutes.  Serve topped with diced green onions.
