Skinny Egg Salad

2 WW Points per 1/2 cup serving

Makes 2 cups

4 large hard boiled eggs, I use this nifty little steamer 13 minutes for soft boiled eggs https://amzn.to/4azWjt5

 

1/4 cup of diced red onion

1/4 cup of diced sliced dill pickles

1/4 cup of 1.5% cottage cheese

2 tbsp of mayonnaise, full fat

 

Chop up eggs and mix with other ingredients until combined. Salt and pepper to taste. Cover and store in fridge.
