Slow Cooker Lipton™️ Chicken & Baby Potatoes

Serves 3

6–7-quart slow cooker

2 chicken breasts (on the larger side)

1lb. of baby gold potatoes (cut larger ones in half)

1 package of onion soup mix

3/4 cup of low sodium chicken broth

Spray the inside of your slow cooker with cooking spray, add potatoes and chicken broth, cover and cook on high for an hour.

Brown chicken quickly in a large heated skillet sprayed with cooking spray.

Place chicken on top of potatoes, sprinkle the soup mix over top and around chicken. Cover and let cook another 1 1/2 hours or until chicken is cooked to 165 degrees. If the chicken finishes before the potatoes, remove the chicken to a plate, cover and continue to cook potatoes a little longer. Mine took another 10 minutes which was exactly the time needed for the chicken to rest and the corn to boil.

Slice chicken and serve, top with liquid and the little bits of onion from the slow cooker

I did have a portion of potatoes left over, so it can serve at least one more if you cook 3 breasts and divvy up the chicken for 4 servings (3pts per serving)
