Orange Yogurt Cake
2 WW Points per serving
Serves 8
1 ¼ cup all purpose flour
1 ¾ tsp of baking powder
¼ tsp salt
1 large egg
1/3 cup fresh squeezed orange juice (1 large orange)
1 ½ tsp of orange zest
3/8 cup of zero calorie sweetener, I used Monkfruit
½ cup of fat free plain Greek yogurt
1 tsp of vanilla extract
Preheat oven 350 degrees, grease 9x5 loaf pan.
In a medium bowl, mix together zest and sweetener, add egg, yogurt, juice, vanilla. Whisk well. In a separate bowl mix flour, salt, powder. Add flour to to egg mixture. Whisk until smooth. Transfer to prepared pan.
Bake 30-35 minutes. Let cool completely in pan.
