1lb. 98/2% ground chicken or grind your own.
1 package of onion soup mix, I use Lipton. You can mushroom or beefy onion flavor
¼ cup plain bread crumbs
1 large egg
1 tbsp worcestershire sauce
2 tbsp sugar free ketchup, I use Heinz
1 can (15oz) black beans, drained and rinsed
Preheat oven to 375 degrees
In a large bowl, mash beans, add egg, onion mix, bread crumbs and worcestershire, mix. Add chicken and mix until completely incorporated. Shape into a loaf, place on greased casserole dish, spread ketchup over top
Bake 35-40 minutes or until meat thermometer reads 165 degrees.
Adding onions on top over the ketchup is not necessary there is plenty of onion flavor in the meatloaf.
