Mini Cottage Cheese Breakfast Bread

6 slices - 2 WW Points each 

4 slices - 3 WW Points each 

Serves 6 – 2 mini loafs

1 cup of old fashioned oats

¾ cup of 1.5% cottage cheese

1 tsp baking powder

¼ tsp salt

1 large egg

Preheat oven 375 degrees, grease 2 mini loaf pans (6x3.3x2)

 

Add egg and cottage cheese to a glass bowl, blend with immersion blender or you can use a regular blender.  Then add oats, powder and salt. Blend until almost smooth, oats pieces are okay.

Divide batter evenly between the two pans

 

Bake 17-20 minutes.

 

I sliced them lengthwise in 3, 2 loafs – 6 pieces. You can cut them any way you wish 😊 Delicious, moist, no added sweeteners.
